Balsamic Glazed Chicken Breasts

I tried a new recipe for dinner tonight and it was awesome! I found this one on my bottle of balsamic vinegar. The farmer thought it was a keeper too.

  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 lb. boneless chicken breasts
  • 1/4 cup balsamic vinegar
  • 1 cup chicken broth
  • 2 tablespoon honey
  • 1 tablespoon butter
  • salt and pepper

Heat olive oil in large frying pan over medium heat. Add chopped onion and garlic. Cook until soft. Pound chicken breasts to 1/4-inch thick. Add chicken breasts to skillet, season with salt and pepper. Cook until browned. Turn, season other side, cook until browned. Remove to a plate. Cover with foil to keep warm. Add balsamic, chicken broth and honey to skillet. Turn heat to high, bring to boil. Then turn heat down to medium low, simmer until liquid is reduced by half. Stir in butter. When melted, add chicken breasts to skillet, heat until warmed. Serve immediately. Makes 4-6 servings.
